I am O.K.

 

My dear friends,

 
Sorry for not contact you sooner ... as always busy as used to... with settle things down in Thailand.  Now I have just got my computer &  internet connection...so I'm ready to spread the news.
 
My family  and I have gone through a bit of hard time. And that makes me have no time or even have mood to be on line like before.
 
After about 2 months in Thailand, now we are fine and settle down almost everything. My first priority now is Atom and his education. For this start I have to give him all support I could. Atom is going through a very difficult time for sure. I put him in the bilingule school. He has to start learning Thai since the beginning. First 2 weeks was very bad, he was under a lot of pressure. He kept asking me why he was stupid and couldn't read Thai. He bite himself on both arms in the classroom because he was angry with himself. That made me couldn't sleep for many nights kept thinking I was choosing the right choice for him or not. I was thinking to move him to international school so he doesn't have to learn Thai at all. I am not sure and don't really know what is best.

The school system here is very difficult and take a lot of time from both student and parents. Atom has about 15 books in his school bags and has homework everyday. Now he studys from 8am - 5pm, comes back home at 6.30 for dinner and shower and do homework, times all gone. Not much free time to enjoy life. 
I am so worried about Atom. He just left hospital last week. He had already admitted in the hospital twice in 2 months. Let's say once in 3 weeks....so bad.

But in general, we are still doing O.K. and getting better each day. I myself take this period as a break to be with my family, taking care my parents and trying to take Atom some trips since I didn't do much in Vietnam.

Tom Yum Goong - (Thailand Famous Hot & Sour Soup)


I have to put this recipe on my space as per so many requests from many friends... after they saw the yummy photo of Tom Yum Soup from Mr. Grant in Australia cooking for his lucky wife. It's all your fault Grant!!!!

 
 
This is definitely a recipe that you can only balance by taste -- tom yum goong should never be bland, but hot and sour.
 
(for 2 Servings )
 
4 cups water  
1 cup shrimp  
5 mushrooms  
1-2 limes  
2 tablespoon fish sauce  
5 sprigs cilantro  
3 bird chili peppers  (depend on how spicy you want : I can eat about 30 chillies...)
1 tablespoon nam prig pow (optional)
 
Start boiling the water in a 2 quart pot. Peel and devein the shrimp and set them aside. Cut lemon grass into pieces, 5-6 inches long. Use the back of your knife to pound the lemon grass, just to bruise it to release the flavor. If you want, you can tie the lemon grass into a knot to make it easier to manage. Drop the lemon grass in water and let boil for 5 minutes.

Put the fish sauce and 1 lime's juice into the bottom of the bowls you will serve the soup in. Crush bird chili pepper and add to the bowl.

Remove the stems from the kaffir lime leaves and add the leafy part to the pot. Clean and halve the mushrooms and add them to the pot. Add the shrimp and turn off the heat. Shrimp gets too tough very quickly, and will cook even when it is just sitting in the warm broth. Scoop the shrimp and liquid into the serving bowls immediately. As soon as you add the liquid to the serving bowl, you will see that the broth becomes cloudy because of the lime juice. Add the nam prig pow. Sprinkle with cilantro and serve.

Be very careful, the peppers can be hot. Take a small sip at a time. Add more fish sauce and/or lime juice if it tastes bland. It's right if it's good for your sinus.
 
If you like spicy food...taste first...and add more chillies  or lime juice or fish sause.
 
 
Tips and substitutions

Unfortunately, for the true taste, it is difficult to substitute anything for the kaffir lime leaves. The richness of the sour taste comes from the complement of the different citrus flavored ingredients.

If you don't like it hot, cut down on the chili peppers or do not cut them up, but leave them whole for decoration. If you like hot or very hot, put more chillies  as you want and may be add some more lime juice and fish sause too.
 
I am real Thai and eat too spicy (more than Thai standard)...I put 30 chillies in my Tom Yum. Would you like to try my soup???

Menu for today : Som Tum : (I am on diet !!! )


Green papaya salad (Som Tum) 

It is the most popular dish among women in Thailand especially when they are on diet. It is a Northeastern food that is eaten with sticky rice and other Northeastern dishes such as laab, beef salad and bamboo shoot salad.

The two most popular types of green papaya salad have either dried shrimp or salted crab. Green papaya salad with dried shrimp and peanuts is called Som tum thai. The green papaya salad with salted crab is called Som tum pbooh. The majority of the ingredients are the same. I like it with both dried shrimp and salted crab.

For 2 serving

1 1/2 tablespoons palm sugar  
3/4 lime  
2 cups green papaya, shredded  
6 green beans  
1 clove garlic  
1 1/2 tablespoons fish sauce  
1 tablespoon dried shrimp  
2 bird chilli  
5 cherry tomatoes  
2 tablespoons peanuts, toasted Optional
 

Many Asian supermarkets have shredded green papaya. However, it's better taste if you can find whole fresh green papaya and then peel and shred papaya using a regular cheese grater with medium to large sized holes. When you get closer to the center, you will see the white immature seeds inside. Stop and move onto another part of the papaya. Discard any seeds that got into your bowl.

In Thailand, green papaya salad is made using a clay mortar, wooden pestle and a spatula. Smash a clove of garlic first. Then add green beans and halved cherry tomatoes. Pound a few times just to bruise the beans and get the juice out of the tomatoes. Add bird chilies and crush them just enough to release the hotness, unless you like your salad really hot (myself put about 25 chillies at once...ha ha ha crazy Thai woman). Add the green papaya, dried shrimp, toasted peanuts, fish sauce, lime juice and palm sugar. Use the pestle to push the mixture up in the mortar and the spatula to push it down so that the mixture is mixed well.

However, if you do not have a big enough mortar you can crush garlic, tomatoes, green beans. Set them aside in a large bowl. Add dried shrimp, fish sauce, lime juice and palm sugar to the bowl. Add green papaya and mix well. Serve with sticky rice and a sliver of cabbage, green beans and Thai basil.

For Som tum pbooh, omit the dried shrimp and toasted peanuts and add salted crabs instead. I microwave the salted crabs for 30 seconds before adding them to the papaya salad to kill any residual bacteria. Add only half of the fish sauce called for because the salted crab can be quite salty.

 
Tips and substitutions
For a vegetarian som tum, omit the dried shrimp and substitute soy sauce for fish sauce.

Some people use tamarind in place of lime (I put both). Regular sugar can be substituted for palm sugar. I normally omit the peanuts because I prefer it without.

The balance of fish sauce, lime juice, palm sugar and peppers listed here are guidelines. Som tum is an individual dish that you will find you might like your with more chillie, lime juice and fish sauce than what the recipe calls for.

Sometimes it pays to be Thai


Being Thai in Bangkok allows you the trifling advantage of strolling into a restaurant and ordering the dishes marked with three chillies without batting an eyelid. The red chilli warning system - one for merely hot, two for searing, three for blistering - was invented by some culinary genius to protect the delicate paletters of foreigners uninitiated to the mortal thrill of Thai cooking. But for Thais, well, they normally laugh it off and proceed to enquire whether a place has any four-chilli offerings. Or make it five. But perhaps the best advantage of being Thai in Bangkok is the ability, which comes with the years, to feel content. With the weather. With the traffic. With the inefficiency. With the state of the nation. Thais care, and try to make things better, but they've also learned to be happy with what they're given. Sometimes Bangkok screams at you. Non-Thais could lose their heads, but if you want to be like a local, just keep cool.

What exactly is a five-day work week in Thailand?


Thais embrace holidays. Who else do you know celebrates the new year three times in four months - Western, Chinese and Thai? On the local calender Thais highlight all the Buddhist holidays, which is not so surprising, but also traditional holidays such as Christmas, ethnic holidays such as Divali, government holidays, bank holidays and, if you are willing to own up to it, even your birthday. And if any of these fall on weekends, the next working day enters the equation as a substitute break.

It's Songkran (Happy Thai New Year)

 
April 13, Songkran, the Thai New Year, (again)...if you could remember read my very first blog here, you would know this day last year was the first day I started my blog. Yessss....It's been already 1 year and 20 minutes with this space.
 
Songkran is a Thai traditional New Year which starts on April 13 every year and lasts for 3 days. Songkran festival on April 13 is Maha Songkran Day or the day to mark the end of the old year, April 14 is Wan Nao which is the day after and April 15 is Wan Thaloeng Sok which the New Year begins. At this time, people from the rural areas who are working in the city usually return home to celebrate the festival. Thus, when the time come, Bangkok temporarily turns into a deserted city. 
 

  

Songkran is a Thai word which means "move" or "change place" as it is the day when the sun changes its position in the zodiac. It is also known as the "Water Festival" as people believe that water will wash away bad luck.The Songkran tradition is recognized as a valuable custom for the Thai community, society and religions. The value for family is to provide the opportunity for family members to gather in order to express their respects to the elders by pouring scented water onto the hands of their parents and grandparents and to present them gifts including making merits to dedicate the result to their ancestors. The elders in return wish the youngsters good luck and prosperity.

 
The values for community is to provide the opportunity to create unity in the community such as to jointly acquire merits, to meet each other and to enjoy the entertaining events. And for the society value is to create concern upon environment with cooperation such as to clean houses, temples, public places and official buildings. Thais value the religion bye means of merits acquisition, offerings alms to monks, Dhamma Practice, listening to sermon and monks-bathing.
 

In the afternoon, after performing a bathing rite for Buddha images and the monks, the celebrants both young and old, joyfully splash water on each other. The most-talked about celebration takes place in the northern province of Chiang Mai where Songkran is celebrated from April 13 to 15. During this period, people from all parts of the country flock there to enjoy the water festival, to watch the Miss Songkran Contest and the beautiful parades.
 
Warning: Try to read this before your visit.
The Thai New Year is celebrated in Bangkok from april 13 to 15 and if you haven't figured it out already, Thais like nothing more than to toss, spray, dump,throw, shoot, pump and squirt water in any way available and at anyone (I think...because this day always be a hottest day of the year). Foreigners are a great target. Anyone dressed for anything other than your average pool party too. Throwing water, actually pouring or sprinkling it, was originally an act of homage to ancestors and family elders. Then came buckets. Then super-sized squirt guns. One best witnessed in Bangkok at Sanaam Luang, which hosts traditional merit-making ceremonies. In the capital, the more boisterous side of the celebration takes place along Khao San Road or anywhere you might find good targets. So come prepared because you will not be spared from the celebration.

When you shouldn't think like a guava

 
Visitors to Bangkok should remember that khao muang ta liew, hai liew ta tarm, roughly the equivalent of " when in Bangkok, do as the Bangkokians do". The saying is literally translated as " when entering the city where the people squint their eyes, squint your eyes like them". The ancient origin of this phrase is obscure, but you can be sure that nobody squints his eyes in Bangkok these days. So the contemporary interpretation should be simple: when entering the city where the people live a relaxed life and enjoy simple fun, have fun with them. But you have to becareful not to get into unnecessary trouble by har hao sai hua- to look for fleas on others because you'll get them on your own head. Otherwise you'll find yourself rong hai nam ta pen pao tao- crying your eyes out.
 
Oh, and don't forget farang means both guava and foreigner.

HOT, HOT, HOT - SO WHAT?

  What's toterably hot and what's too hot is a matter of familiarity when it comes to the weather. Since the World Metereological Organisation dubs Bangkok, Thailand as the world's hottest large city, it's no secret that the thermometer is a daily topic of conversation. Thais have long taken refuge in the ironic joke, which has over the years acquired a semblance of truth, that there are only three seasons in this country: hot, hotter and hottest. Sure, they complain when it gets stifling, but they still manage to play football at 3pm, go shopping at outdoor markets and nonchalantly eat the food that's even hotter than the weather.

Why visit Bangkok?


  OK guys...since I have been here in my home town...I would like to be a good host showing you all around Bangkok and the rest of Thailand starting from this blog. Hope you don't mind and also can enjoy with me...following me then.....
 
Even if you've seen the sight , eaten the food and shopped until you dropped,  the Thai capital is always worth another look. This ever-changing metropolis is in equal measures Asian and Western,classical and contemporary, and both the greatest of fun and frustrating at times.
 
If you have never played Takraw with the locals,   got lost at JJ, been confused with guava, celebrated a holiday you've never heard of, joined in the pre-dawn exercises at Lumpini Park, taken in some contemporary art, made an offering at a shrine, weighed in on where to find the best Som Tam, smiled at complete strangers, wandered around Pak Khong Talaat at 6am or watched the sun set over the Temple of Dawn? Letter from My Old Pal " Rin"

  A letter from Surin Islands : Thailand  

Hi there,

How are you guys doing?  We were just back from Surin Islands this morning.  Had a really a great time and the islands are really beautiful. After a long, uncomfortable, bumpy bus ride, we arrived at the township called Kuraburi (Ku-ra-bu-ree) where the pier is located.  Then another 2.5 hours on the boat to the islands, which are off the coast about 40 miles.  It is the reason why the water is so clear because the waste from the mainland can’t reach the islands.  We stayed in the tent as you can see in the pictures.  It was real hot at night.  We had the front opened all night just to get the breeze from the ocean.  We snorkeled in the morning and afternoon almost every day by the long-tail boat (you can also see in the pictures, the one just like it).  

 

The coral reefs, fish and everything under the water are so amazing.  I did see a turtle too.  We didn’t have many photos under water because our cameras are not waterproof but I did catch some photos of Nemoes by walking down from the beach into the water.  When it is low tide, you can walk off the beach right in front of our tent for about 500 yards and the water is still only a knee deep.  I took about 50 shots but since it wasn’t a fish tank, there were waves coming and only about 3-4 shots were usable.  If you really look, then you will see a couple of cartoon fish in there.  The coral behind are all mud-covered since this beach were also hit by Tsunami.  It was definitely much more beautiful.  I have more pictures but this email can’t hold too many.  I really wish everyone can be there and see what I saw.

 

 

  

Well, fun time is almost over.  I have not been working in a month.  Time to get serious about my job.  I am signing off now so take care and visit Thailand sometimes soon.

My next trip planning: Thailand : Good place & Good food (recommended)

"Moom Aroi" in Sriracha Province, Thailand   /  " มุมอร่อย"  (Moom Aroi) ศรีราชา  ประเทศไทย

  

If you have a chance to visit Thailand, you should try to visit this place. Moom Aroi is the name of the restaurant in Sriracha Province, Thailand. If you want to say it in English...may be you can say "Yummy Conner". It's about 2 hours drive from Bangkok and right by the beach in the east. This place is opened in style Hip Pub & Restaurant. There are two zone for you to enjoy. One is outdoor zone along the beach that you can sit and enjoy your foods while you can also see the island and surfs. The other is indoor zone which is inside the modern structure. The highlight is the second floor with karaoke rooms built from all mirrors that you can sing and enjoy the atmosphere at the same time.

The foods here is in high quality especially the seafood...very fresh and very tasty. Let's see some favorite menu here....

ลองมาดูอาหารของที่นี่บ้างดีกว่า ...

ส้มตำปูม้า (35 บาท)เป็นเมนูที่สร้างชื่อเสียงให้กับร้านนี้  เส้นมะละกอของที่นี่จะแตกต่างจากที่อื่น คือจะขาว ใส กรอบ เพราะจะแช่น้ำแข็งก่อนนำมาปรุงและกุ้งแห้งที่ใช้ก็จะต้องผ่านการทอดกรอบก่อน รสชาติก็เปรี้ยวนำหวานตาม อร่อยไม่มีที่ติ  ที่สำคัญคือราคาไม่แพงเลย

ปูม้าผัดมะนาว (260 บาท) ใครที่คิดหน้าตาของจานนี้ไม่ออกก็ลองจินตนาการถึงปูผัดผงกะหรี่ดูนะหน้าตาเหมือน ๆ กันเลย แต่ที่ต่างกันก็คือจะบีบมะนาวลงไปด้วยรสชาติแปลกดีและปูก็มีไข่ปูเยอะดีด้วย 

กุ้งกระดานทอดกระเทียม (275 บาท) กุ้งกระดานที่ว่านี้ก็คือกั้งนั่นเอง  เนื้อกั้งจะหวานและเด้งดึ๋ง อาจเป็นเพราะของที่นี่เค้าสดจริงๆ

ปลากะพงทอดราดน้ำปลา (280 บาท)

ผัดเรือโป๊ะสูตรโบราณ (120 บาท) มีส่วนประกอบแปลก ๆ อย่าง หอยโจงโดง  เอามาผัดรวมกับเนื้อปลาอินทรีย์ลูกชิ้นปลา กุ้ง และปลาหมึกในลักษณะคล้าย ๆ กับผัดฉ่า

ตำคอหมูย่าง (65 บาท) คอหมูย่างนุ่ม ๆ ย่างจนหอมนำมาราดด้วยน้ำยำที่มีส่วนผสมเป็นมะม่วงมันหั่นแบบลูกเต๋า คลุกเคล้าด้วยถั่วลิสง กุ้งแห้ง และกระเทียมเป็นสูตรที่คิดออกมาได้อร่อยลงตัวดี

ทะเลโหด (150 บาท) ลักษณะคล้ายกับโป๊ะแตก มีน้ำแกงขลุกขลิกเสิร์ฟบนหม้อไฟโดดเด่นด้วยอาหารทะเลสด ๆ อาทิ หอยแมลงภู่ตัวใหญ่ ๆ ที่ประดับอยู่รอบ ๆ หม้อไฟ ปลาอินทรีย์เนื้อแน่น กุ้ง และปลาหมึก รสชาติก็แซ่บโหดสมชื่อเพิ่มความกลมกล่อมด้วยการใส่เต้าเจี้ยวลงไปทำให้มีเจือหวานนิดๆ และใบกระเพาก็ช่วยให้น้ำแกงหอมหวนยิ่งขึ้น
